ALOO SAMOSA





INGREDIENT:

OUTER LAYER:
  1. Maida  - 250 grams
  2. Oil - 2 tablespoon
  3. Salt
  4. Water
FILLINGS:
  1. Oil
  2. Cumin seeds - 1 teaspoon
  3. Onion - 1 (large size)
  4. Ginger Garlic paste - 1 tablespoon
  5. Peas - 100 grams
  6. Potatoes - 2
  7. Turmeric powder - 1/2 teaspoon
  8. Chilli Powder - 1/2 tablespoon
  9. Chaat masala - 1 teaspoon
  10. Salt  

PREPARATION:

FOR DOUGH:
  1. Add maida,salt and oil in a mixing bowl and mix all the ingredient well.
  2. Add water make the dough.
  3. Rest it for 1/2 hour.
FOR FILLINGS:
  1. Heat the pan and add the oil in the pan.
  2. Add cumin seeds fry it for 1 sec.
  3. Add Onion and ginger garlic paste , saute it to remove raw smell.
  4. Add boiled peas and mashed potatoes, turmeric powder , chilli powder , chaat powder and salt.
  5. Saute it for 2 to 3 mins.

  1. Make the dough into samosa shape and add the fillings in it.
  2. Deep fry the samosas in medium flame.

TIPS: 


 Don't deep fry the samosa in high flame.

  1.  Add tamarind paste,jaggery in a saucepan, boil it for 10 mins.
  2. Add cumin powder and salt in that mix ,boil it for 2 mins and serve it with samosa.



SERVE:


  Serve the samosa with chaat chutney.

COCONUT CHICKEN CURRY


   Hi foodies..! Happy to see you all..Today i come up with one delicious chicken recipe.
We always prepared some usual chicken gravy or fries.so , i want to try something different . Suddenly i popup with some idea...little change in our usual gravy.
To cook my chickens in coconut milk.
Result was awesome so i eager to share my recipe in my blog with you all.




INGREDIENTS:
1.Oil
2.Bay leaves
3.cinnamon and cardamon
4.fennel seeds - 1 teaspoon
5.onion - 2 large
6.ginger garlic paste - 1 tablespoon
7.tomato - medium size 2
8.chicken - 750 grams
9.coconut milk - 2 cups
10.chicken masala - 2 tablespoon
11.turmeric powder - 1 teaspoon
12.cashew nuts - 10
13.green chilli - 3
14.shallot - 10
15.curry leaves
16.coriander leaves
17.lemon
18.salt
PREPARATION:
BEFORE PREPARATION:
1.PASTE:
Grind the cashew,shallot and green chilli.
2.MARINATE:
Marinate the chicken for 1/2 hr with curd,turmeric powder,lemon juice or vinegar.
PROCESS:

1.Heat the pan and add fennel seeds fry it for 2 sec and add bay leaves, cardamom,cinnamon and curry leaves.
2.Add the finely chopped onions and saute it until it turn into golden browns.
3.Add ginger garlic paste saute it to remove the raw smell.
4.Now add finely chopped tomato and smashed it in the pan.
5.After that add chicken,fry it for 2 mins and close the lid cook it for 5 to 7 mins.
6.Now add turmeric powder,chicken masala,chilli cashew shallot paste,coconut milk and salt . Close the lid and cook it for 10 mins.
7.Finally add 1 teaspoon lemon juice and coriander leaves and close the lid for 1 or 2 mins after the chicken is cooked turn off the flame.
TIPS:
Add salt when you saute the onion to fry onions quickly.
SERVING:
Serve our coconut milk juicy chicken curry with roti or rice.

KULFI





INGREDIENTS:


  • Milk
  • Almonds
  • Pista
  • Sugar
  • Milk Maid
  • Saffron


METHOD:


  1. Heat the pan and add high fat milk and make it boil.
  2. Add sugar , milk maid ,  almonds and pista.
  3. Boil it until it turn into thick consistency.
  4. Add saffron.
  5. Add the milk in the kulfi mould and freeze it for 8 to 12 hours.


Try this recipe and beat the heat with this kulfi.

EGG CURRY





         Hi guys !!! A very easy type of cooking is dishes with egg.
we only know some basic type of egg omelets or bhurji(poriyal).Today i will share one of my favorite and easy egg recipe.
You can serve this egg curry with idly,dosa,parathas,rotis and Ghee rice(👈click here).Let see...



INGREDIENT:

  • Oil
  • Cardamom - 4
  • Cinnamon - 1 inch
  • Fennel seeds - 1 tbsp
  • Onions - 2
  • Tomato - 4
  • Ginger garlic paste - 1tbsp
  • Cumin powder - 2 tsp
  • Garam masala - 2 tbsp
  • Chilli powder - 2 tbsp
  • Coriander powder - 3 tbsp
  • Pepper powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Boiled egg - 5
  • Salt for taste 
  • kasuri methi(fenugreek) leaves(dried)
  • Coriander leaves

METHOD:


  1. Heat the oil in the pan add cumin powder -1 tsp,garam masala - 1 tbsp,chili powder - 1 tbsp,coriander powder - 1 tbsp,turmeric powder - 1/2 tsp.
  2. After that add the boiled eggs and fry it for 5 mins(to make crispy layer.)
  3. Heat the oil in the pan add cardamom and fennel seeds.
  4. Add finely chopped onions and fry it to make golden brown.
  5. Add ginger garlic paste cook it to remove raw smell.
  6. Now add tomato puree and cook it for some mins(10 mins) to remove that raw smell.
  7. Now add all the masalas and salt , again cook it for 5 mins.(add water if needed)
  8. Now add the fried eggs in this gravy.
  9. Cook it for 5 mins add the coriander leaves ,kasuri methi and 1 tbsp oil. close the led for 5 mins.
  10. Turn of the flame in gravy consistency.


Our egg curry is ready...
SERVE IT HOT!!


GHEE RICE





            Hi friends...Every one of us love to eat variety rice right??
But some time we have no much time for making biryani or any other variety rice..our tummy cries😂
Today i share one of the very easy and delicious variety rice GHEE RICE.



INGREDIENTS:


  • Ghee
  • Cumin seeds - 1 tsp
  • Cardamom - 2
  • Cinnamon - 1 inch
  • Bay leaves - 1
  • Onion(large) - 2
  • Ginger garlic paste - 1 tablespoon
  • Mint leaves - 1/2 cup
  • Coriander leaves - 1 cup
  • Basmati rice - 2 cup
  • Salt


METHOD:


  • Heat the pan and add the ghee in it.
  • Add cumin seeds after they crack add bay leaves,cinnamon and cardamom.
  • Add onions thinly sliced  and fry it until it turn golden brown.
  • Add ginger garlic paste cook it to remove raw smell.
  • Add the mint and coriander leaves and cook it well in ghee. 
  • Now heat the pressure cooker on other side.
  • Add ghee and add 2 cup of rice,salt, the mixture we make above and 2 cup of water(to cook rice)
  • Wait for three whistle after that turn off the flame. Rest the cooker for 1/2 hour or 15 min(so that rice cook in that gas)
  • Now our ghee rice is ready.you can serve it with chicken or Egg curry(👈click here).

HINT:    You can add coconut milk instead of water to cook rice for extra flavor.

GOTHUMAI(WHEAT) ADHIRASAM



            Hi!!!!Today i come with one easy and delicious sweet.We are all know making adhirasam is some more difficult.
But today i will share you to make easy Gothumai(wheat) adhirasam in 10 mins.
Lets see what are all the ingredients and procedure for making this delicious south indian sweet.






INGREDIENTS:

  • Wheat flour - 1 cup
  • Jaggery powder - 1 cup
  • Semolina - 2 table spoon
  • cardamon powder - 1/2 teaspoon
  • White sesame - 1 teaspoon
  • Ghee - 50g
  • Oil


METHOD:


  1. Add wheat flour,semolina,cardamon powder,white sesame and ghee in a mixing bowl.
  2. Mix it well
  3. Heat the pan add 1 cup of jaggery and add little amount of water to dissolve jaggery(don't make jeera just disolve the jaggery)
  4. After that add the dissolved jaggery in the mixing bowl and mix all together and make a dough for Adhirasam.
  5. After making dough spread a ghee in your hand and make a palms size circle using dough.
  6. Finally heat the oil in the pan for deep fry and deep for our Adhirasam.

HINT:

  1. Don't use salt already jaggery have salt.
    GOTHUMAI ADHIRASAM
  2. you can use any amount of jaggery as per your taste.

ALOO KACHORI


Hi friends..!!
        Today i come up with one famous Indian chaat item KACHORI...
i will share one easy and tasty way of kachori making.Let's see.








INGREDIENT:


FOR DOUGH:

  • Maida - 1 cup
  • Cumin seeds - 1 tsp(optional)
  • Milk - 1/4 cup
  • Sugar - 1 tbsp
  • Oil 
  • Salt


FOR FILLING:

  • Boiled Potato - 3
  • Onions(large) - 1
  • Ginger garlic paste - 1 tbsp
  • Red chili powder - 1 tbsp
  • Garam masala - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Chaat masala - 1 tsp
  • Asafoetida - 2 pinch
  • Lemon juice - 1 tbsp
  • Salt


METHOD:

  1. First make the dough by adding maida,sugar,salt,milk,oil and water.
  2. Rest it for 1 hour.
  3. Now heat the pan with some oil and add cumin seeds.
  4. Add the finely chopped onions and saute it until it became golden.
  5. Now add ginger garlic paste and fry it to remove raw smell.
  6. Mashed the boiled potatoes and add it in pan.
  7. Now add all the masalas, asafoetida,lemon juice and salt to taste.
  8. Mix all together and cook for 5 mins in medium flame.
  9. Our filling is ready. 

KACHORIES:

  1. Now make the rotis using our dough and filled our potato filling.
  2. Heat the oil in the pan for deep fry and fry our kachories.

Our super duper chaat is ready now.
Serve with chaat chutney(click) , onions, sev and lemon!!
